HAPPY CHICKEN

“Large breasts, long legs, little fat, French ancestry.”

Sounds like a tasty classified ad, but when a Redbro chicken from B.C.'s Polderside Farms shows up, the guy might be surprised.

We suggest the following method for roasting (so at least there will be a great dinner when he finally gets a real date).

Perfect Roast Chicken
Wash and dry one Polderside Farms organic chicken (4-5 pounds)
Slide ½ T butter underneath the skin of each breast
Cut an organic lemon in half and put in cavity
Rub entire skin with Dijon mustard, then salt and pepper
Place in 2 T olive oil in a cast iron skillet
Roast in a preheated 425 degree oven for 15 minutes. Reduce heat to 350 degrees and cook for an hour to 75 minutes or more (until internal temperature is 160 degrees and thighs pull away easily)
Let it rest for 15 minutes
